Chef Shunji Hashiba presents an omakase for up to six guests,

featuring the finest seafood he encounters that day at the local port,

alongside seasonal vegetables nurtured by the snowmelt waters of the Tateyama mountains.

Because we are just moments from the harbor,

we are able to serve seafood caught that very morning

— with a purity of sweetness and a remarkable freshness that could never be recreated in the city.


It is an expression shaped by time and distance, something that can exist only here.


Dinner does not end with a fixed sequence.
As you are staying with us,
there is no need to think about the time.
One more piece, perhaps another
— you are free to continue at your own pace.

Inspired by the mood of the evening,
additional sushi may be offered,
or a new piece may be created on the spot through conversation and preference.

It finds its shape
in the unspoken exchange between chef and guest.
 

After dinner, enjoy the lingering afterglow in your own way
— with a carefully chosen glass in the wine room,
or in the stillness of the spa overlooking Toyama Bay.

seafood freshly landed that very day arrives from the fishing port just three minutes away.

steam rising from freshly cooked Toyama rice,
